Cross Contamination
The Food Standards Agency (FSA) have produced guidance for all food businesses and enforcing officers on controlling cross contamination of E coli 0157. The guidance was issued by the FSA as a result of the E. coli outbreak in South Wales in 2005.
The guidance covers several areas throughout a food business where there is potential for cross contamination. Areas covered include physical separation, cleaning and disinfection, personal hygiene and handling practices and food safety management systems.
